Start by slicing the chicken breasts in half horizontally to create four thin cutlets. Season both sides with salt and pepper.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken cutlets and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add another 1 tablespoon of olive oil and the minced garlic. Cook for about 30 seconds until fragrant.
Add the chopped tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to soften and release their juices.
Return the cooked chicken to the skillet, nestling it among the tomatoes. Let it simmer for an additional 5 minutes to absorb the flavors.
Tear the fresh basil leaves and sprinkle them over the chicken and tomatoes. Stir to combine well, and let it cook for another 1 minute.
Serve the tomato basil chicken in the skillet with a sprinkle of parmesan cheese on top, if using. Enjoy it hot!
