Ingredients

  • 5 oz lean ground turkey (formed into meatballs)
  • 2 medium zucchinis
  • 0.5 cup marinara sauce (gluten-free)
  • 0.5 cup cooked brown rice
  • 1 tbsp olive oil
  • 1 tbsp grated Parmesan
  • 1 clove garlic
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 0.5 tsp Italian seasoning

Instructions

1

Heat a large skillet over medium heat and add the olive oil. Once the oil is hot, add the turkey meatballs.

2

Cook the turkey meatballs for 5-7 minutes, turning occasionally, until browned on all sides and cooked through. Remove from the skillet and set aside.

3

In the same skillet, add minced garlic and sauté for 1 minute until fragrant.

4

Add the spiralized zucchini to the skillet. Sprinkle with salt, pepper, and Italian seasoning. Cook for 3-4 minutes, stirring occasionally, until the zucchini noodles begin to soften.

5

Pour in the marinara sauce and cooked brown rice, stirring to combine with the zucchini noodles. Cook for another 2 minutes until heated through.

6

Return the meatballs to the skillet, nestling them into the sauce and noodles. Sprinkle grated Parmesan over the top.

7

Cover the skillet and let it simmer for 2-3 minutes, allowing the flavors to meld together.

8

Serve hot, garnished with extra grated Parmesan if desired.
