Once the sugar has fully dissolved and the mixture is simmering, add the cocoa powder and whisk until it is completely incorporated and smooth.

Allow the mixture to simmer for about 10 minutes, stirring occasionally, until it thickens to a syrup-like consistency.

Remove the saucepan from the heat and let the mixture cool for a couple of minutes.

Strain the syrup into a clean glass jar or bottle using a fine mesh strainer to remove any solids.
