Preheat the oven to 200°C (400°F).
In a large bowl, toss the sweet potato cubes with half of the olive oil (1/2 tbsp), half of the salt, and half of the pepper. Spread them out on a baking sheet.
Roast the sweet potatoes in the preheated oven for 10 minutes.
While the sweet potatoes are roasting, mince the garlic clove.
After 10 minutes, remove the sweet potatoes from the oven and add the broccoli florets to the baking sheet. Drizzle the remaining olive oil, remaining salt, and pepper over the broccoli and sweet potatoes. Toss gently to combine.
Place the salmon fillet on the baking sheet next to the vegetables, skin-side down. Sprinkle the minced garlic over the salmon.
Return the baking sheet to the oven and bake for an additional 15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
Remove from the oven and serve the salmon and roasted vegetables with lemon wedges on the side. Squeeze the lemon over the salmon before eating for extra flavor.
