Crack the 3 large eggs into a bowl. Add 1/4 tsp salt and 1/8 tsp pepper. Whisk until well combined.
Heat 1 tsp of olive oil (or butter) in a non-stick skillet over medium heat.
Pour the egg mixture into the skillet, spreading it evenly. Let it cook for about 2 minutes until the edges begin to set.
Sprinkle the wilted spinach and crumbled feta cheese evenly over one half of the omelette.
Using a spatula, gently fold the uncovered half of the omelette over the filling. Press down slightly and cook for another 2-3 minutes until the eggs are fully set and the cheese is melted.
Slide the omelette onto a plate and serve immediately with the toasted slice of whole grain bread.
