Ingredients

  • 4 medium tomato
  • 2 medium bell pepper
  • 2 tablespoons olive oil
  • 600 grams chicken breast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 whole garlic cloves
  • 1 medium onion
  • 1/2 cup chicken broth
  • 1 tablespoon basil
  • 1 tablespoon parsley

Instructions

Dice the tomatoes and bell peppers. Mince the garlic and chop the onion finely.

Cut the chicken breast into bite-sized pieces. Season with salt and black pepper.

In a large skillet, heat olive oil over medium-high heat and add the chicken pieces. Cook until browned and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.

Using the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, around 3-4 minutes.

Add the diced tomatoes and bell peppers to the skillet. Cook for another 5 minutes, stirring occasionally, until the vegetables soften.

Pour in the chicken broth and return the chicken pieces to the skillet. Stir everything well and let it simmer for 10 minutes to allow flavors to meld together.

Add chopped basil and parsley to the skillet. Stir to combine and cook for an additional 2 minutes.

Serve the tomato pepper chicken hot, optionally garnished with additional fresh herbs.
