Ingredients

  • 160 g Soba noodles
  • 200 g Silken tofu
  • 2 tbsp Tahini
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 thinly sliced Cucumber
  • 2 sliced Scallions
  • 1 tbsp Toasted sesame seeds
  • 2 tbsp Water

Instructions

Cook the soba noodles according to package instructions. Once cooked, rinse under cold water to stop the cooking process and drain well.

In a bowl, whisk together tahini, soy sauce, rice vinegar, and water until smooth. Adjust the seasoning with salt and pepper to taste.

Slice the silken tofu into bite-sized cubes.

In a large mixing bowl, combine the drained soba noodles, sliced cucumber, and tofu cubes.

Pour the tahini dressing over the noodles, vegetables, and tofu. Gently toss to coat everything evenly.

Transfer the coated noodles to serving bowls.

Garnish with sliced scallions and toasted sesame seeds.
