Ingredients

  • 160 g Soba noodles
  • 200 g Silken tofu
  • 2 tbsp Tahini
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 medium, thinly sliced Cucumber
  • 2 stalks, chopped Scallions
  • 1 tbsp Toasted sesame seeds
  • 2-3 tbsp (adjust for sauce consistency) Water
  • to taste optional Salt
  • to taste optional Black pepper

Instructions

Cook the soba noodles according to the package instructions. Drain and rinse under cold water to cool them down, then set aside.

While the noodles are cooking, prepare the dressing by mixing the tahini, soy sauce, rice vinegar, and water in a small bowl. Adjust the water quantity to reach your desired dressing consistency.

Cut the silken tofu into small cubes and set aside.

In a large mixing bowl, combine the cold soba noodles with the cubed silken tofu and thinly sliced cucumber.

Pour the sesame dressing over the soba noodle mixture. Gently toss to combine, ensuring that the noodles, tofu, and cucumber are coated with the dressing.

Add chopped scallions and toasted sesame seeds on top for garnish. Optionally, sprinkle with salt and black pepper to taste.

Serve the dish cold, either evenly divided between two bowls or as a shared platter.
