In a large mixing bowl, combine the cooked quinoa, sliced grilled chicken breast, and drained chickpeas.
Cut the cherry tomatoes in half and dice the cucumber. Add them to the bowl with the quinoa, chicken, and chickpeas.
Add the crumbled feta cheese to the bowl.
In a small bowl, whisk together the olive oil and lemon juice with a pinch of salt and pepper to create the dressing. Add any fresh herbs you like (such as parsley or mint).
Pour the dressing over the salad and toss gently to combine all ingredients evenly.
Taste the salad and adjust the seasoning with more salt, pepper, or lemon juice if needed.
Serve the salad immediately, or chill it in the refrigerator for 10-15 minutes to allow the flavors to meld.
