Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocados with a fork until smooth, but still slightly chunky. Add salt and pepper to taste.

Once the water is simmering, poach the eggs one at a time. To do this, create a gentle whirlpool in the water using a spoon. Crack an egg into a small bowl, then gently slide it into the center of the whirlpool. Cook for about 3-4 minutes or until the egg whites are set but the yolks are still runny.
