Begin by bringing a medium pot of water to a gentle simmer over medium heat. Add a pinch of salt to the water.
While the water is heating, toast the slices of whole grain bread until golden brown and crispy. You can use a toaster or a skillet for this step.
Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocados with a fork until smooth, but still slightly chunky. Add salt and pepper to taste.
Once the water is simmering, poach the eggs one at a time. To do this, create a gentle whirlpool in the water using a spoon. Crack an egg into a small bowl, then gently slide it into the center of the whirlpool. Cook for about 3-4 minutes or until the egg whites are set but the yolks are still runny.
Using a slotted spoon, carefully remove the poached egg from the water and set it on a plate. Repeat with the remaining eggs.
Spread the mashed avocado evenly onto each slice of toasted bread. Then, carefully place a poached egg on top of each piece of avocado toast.
Sprinkle red pepper flakes on top for added flavor, and season with additional salt and pepper if desired.
Serve immediately and enjoy your delicious Avocado Toast with Poached Eggs!
