In a small bowl, crack the eggs and beat them with a fork. Add salt and black pepper to taste.
Heat olive oil in a non-stick skillet over medium heat. Add the beaten eggs and scramble them until they're set to your liking. Remove from heat.
Meanwhile, heat the black beans in a small saucepan over low heat or microwave for about 1 minute until warmed.
Slice the avocado into thin strips.
Warm the whole wheat tortillas in a dry skillet over medium heat or microwave for about 20 seconds each to make them pliable.
To assemble the burritos, lay out a tortilla and place some scrambled eggs in the center. Sprinkle with a portion of the shredded cheese and black beans. Add a few avocado slices and a spoonful of salsa.
Fold in the sides of the tortilla and then roll it up tightly from one end to the other to form the burrito. Repeat with the other tortillas.
Serve the burritos warm with extra salsa on the side if desired.
