Total: 20 minutes
BreakfastBrunchQuick MealsHealthy

Ingredients

  • 4 slices whole grain bread
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Red chili flakes (optional)
  • 4 cups Water
  • 1 tbsp Vinegar

Instructions

1

Bring 4 cups of water to a gentle simmer in a large saucepan. Add 1 tablespoon of vinegar to help the eggs coagulate quickly.

2

While the water is heating, cut the avocados in half, remove the pit and scoop the flesh into a bowl. Mash the avocado with a fork and season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Mix in red chili flakes if using.

3

Toast the 4 slices of whole grain bread until golden brown.

4

Once the water is simmering, crack each egg into a small bowl or cup. Create a gentle whirlpool in the water with a spoon, then slowly pour each egg into the center of the whirlpool one at a time. Cook each egg for about 3-4 minutes until the whites are set but the yolk remains runny.

5

Use a slotted spoon to carefully remove the poached eggs from the water and place them on a paper towel to drain any excess water.

6

Spread a quarter of the mashed avocado mixture onto each slice of toasted bread.

7

Top each piece of avocado toast with a poached egg.

8

Serve immediately, garnished with additional salt, pepper, or chili flakes to taste.
