Preheat a grill pan or skillet over medium-high heat. Brush the chicken breasts with 1 tablespoon of olive oil, and season with salt and black pepper.
Grill the chicken breasts for 6-7 minutes on each side until fully cooked and there are nice grill marks. Once done, let them rest for a few minutes, then slice thinly.
Slice the tomatoes and mozzarella into 1/4 inch thick slices.
Assemble the sandwiches: On two slices of bread, layer the sliced chicken, tomato slices, mozzarella slices, and fresh basil leaves. Drizzle 1 tablespoon of balsamic glaze over the layers. Top with the remaining bread slices to form sandwiches.
Heat 1 tablespoon of olive oil in a clean pan over medium heat. Place the sandwiches in the pan and cook for 3-4 minutes on each side until the bread is golden brown and the cheese is melted. Press down with a spatula to help the sandwiches stick together.
Prepare the side salad: In a large bowl, toss the mixed salad greens with 1 tablespoon of olive oil, balsamic glaze (1 tablespoon), salt, and pepper according to taste.
Serve the warm Caprese chicken sandwiches with the side salad. Enjoy your meal!
