Thinly slice the onion and set aside.
In a mixing bowl, whisk together eggs and milk until well combined.
Gradually add flour to the egg mixture, whisking continuously to avoid lumps.
Stir in the sliced onions, salt, and pepper into the batter.
Heat 1 tablespoon of oil in a non-stick frying pan over medium heat.
Pour about 1/4 cup of the batter into the pan for each pancake, spreading it slightly with the back of a spoon.
Cook for 2-3 minutes on each side or until golden brown and cooked through.
Remove from the pan and place on a paper towel-lined plate to absorb excess oil. Repeat with remaining batter, adding more oil to the pan as needed.
Serve the pancakes warm, optionally with sour cream or cheese on the side.
