Bring 1 litre of water to a boil in a large pot, add 1 tsp of salt.
Add 200g of pasta to the boiling water and cook according to package instructions, typically around 8-10 minutes, until al dente.
While the pasta is cooking, thinly slice 3 garlic cloves.
In a large pan heat 2 tbsp of olive oil over medium heat, add the sliced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
Add 2 tbsp of unsalted butter to the pan and let it melt, stirring occasionally.
Once the pasta is cooked, reserve 1/4 cup of pasta water and drain the rest.
Add the cooked pasta to the pan with the garlic butter, and toss well to coat evenly. If needed, add a little reserved pasta water to loosen the sauce.
Grate 50g of parmesan cheese and add to the pasta, mixing well until melted and creamy.
Season with 0.5 tsp of pepper and adjust salt to taste. Finish with a sprinkle of 2 tbsp of freshly chopped parsley.
Serve hot, garnished with additional parmesan if desired.
