Ingredients

  • 3 pieces large onions
  • 1 sheet puff pastry
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme leaves
  • 100 grams feta cheese
  • 1 piece egg

Instructions

Preheat your oven to 200°C (400°F).

Roll out the puff pastry sheet on a floured surface to fit a 9-inch tart pan. Place the pastry into the pan, trim the edges, and prick the base with a fork.

Chill the pastry in the fridge while you prepare the onions.

Thinly slice the onions.

Heat olive oil in a large skillet over medium heat. Add the onions and sprinkle with sugar and salt. Cook, stirring occasionally, until the onions are soft and golden brown, about 20-25 minutes.

Once the onions are caramelized, stir in the balsamic vinegar and fresh thyme leaves. Cook for another 2 minutes, then remove from the heat.

Crack the egg into a bowl and whisk with a fork. Use a pastry brush to apply a thin layer of the beaten egg onto the crust's edge.

Spoon the caramelized onion mixture into the chilled pastry shell. Crumble the feta cheese over the top of the onions.

Bake the tart in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.

Allow to cool slightly before slicing. Serve warm or at room temperature.
