Ingredients

  • 4 oz cod fillet
  • 1/2 cup cooked quinoa
  • 1 cup arugula, cucumber, tomato salad
  • 1 tbsp olive oil & lemon dressing
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 whole lemon

Instructions

Pat the cod fillet dry with a paper towel to remove any moisture; season both sides with salt and black pepper.

Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Once the oil is hot, place the cod fillet in the skillet.

Cook the cod for about 3-4 minutes on each side, or until it is cooked through and flakes easily with a fork. Remove from the skillet and let it rest.

While the cod is cooking, mix the cooked quinoa with the arugula, cucumber, and tomato salad. Drizzle 1 tablespoon of olive oil & lemon dressing over the salad and toss to combine.

Cut the whole lemon in half. Squeeze half of the lemon over the cooked cod fillet and the other half over the quinoa salad for additional flavor.

Serve the cod fillet on a plate with the quinoa salad on the side. Garnish with extra lemon wedges if desired.
