Baked Salmon with Quinoa and Asparagus

Ingredients

  • 2 6 oz each salmon fillets
  • 1 cup cooked quinoa
  • 2 cups asparagus
  • 2 tbsp olive oil
  • 1 whole lemon
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Place the salmon fillets on the prepared baking sheet. Drizzle 1 tablespoon of olive oil over the fillets. Season both sides with salt and black pepper.

Cut the lemon in half. Squeeze half of the lemon juice over the salmon fillets. Slice the remaining half into thin slices, and place a couple of slices on top of each fillet for garnish.

Trim the ends of the asparagus. Toss them with the remaining 1 tablespoon of olive oil, salt, and pepper.

Arrange the asparagus around the salmon on the baking sheet.

Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.

While the salmon and asparagus are baking, prepare the already cooked quinoa if needed (reheat in a microwave or on the stove).

Once baked, remove the salmon and asparagus from the oven. Serve the salmon on a plate with a side of quinoa and roasted asparagus. Garnish with additional lemon slices if desired.
