Baked Salmon with Roasted Sweet Potato & Steamed Broccoli

Ingredients

  • 170 g salmon fillet
  • 200 g sweet potato
  • 1 cup broccoli florets
  • 1 tsp olive oil
  • 1 wedge lemon wedge
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dill

Instructions

Preheat your oven to 200°C (400°F).

Peel and cube the sweet potato into bite-sized pieces. Place them in a mixing bowl.

Drizzle half a teaspoon of olive oil over the sweet potatoes. Add half of the salt and pepper, then toss to coat evenly.

Spread the sweet potato cubes onto a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until tender and lightly crispy, turning halfway through.

While the sweet potatoes are roasting, place the salmon fillet on another baking sheet lined with parchment paper.

Brush the salmon with the remaining olive oil, and sprinkle with the remaining salt, pepper, and dill.

Once the sweet potatoes have been roasting for about 10 minutes, place the baking sheet with the salmon in the oven. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

While the salmon and sweet potatoes are baking, bring a small pot of water to a boil and add a steamer basket on top. Place the broccoli florets in the basket, cover, and steam for 5-7 minutes until tender.

Serve the baked salmon with the roasted sweet potatoes and steamed broccoli on a plate. Squeeze a wedge of lemon over the salmon before serving.
