Ingredients

  • 8 oz whole wheat pasta
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 0.5 cup parmesan cheese

Instructions

Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Reserve 1/4 cup of pasta water and then drain the pasta.

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the broccoli florets, sliced bell peppers, and sliced zucchini to the skillet. Sauté the vegetables for about 5-7 minutes until they are tender but still crisp.

Add the cooked pasta to the skillet along with the reserved pasta water. Toss everything together until the pasta is well coated with the oil and vegetables.

Sprinkle the grated parmesan cheese over the pasta and vegetables, and season with salt and pepper to taste. Toss again to combine.

Serve the pasta primavera hot, garnished with additional parmesan cheese if desired.
