Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to the package instructions until al dente, or firm to the bite. Reserve 1/2 cup of pasta water, then drain the pasta.
While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the mixed vegetables (zucchini, bell peppers, carrots) to the skillet. Season with salt and pepper to taste. Sauté the vegetables for 5-7 minutes until they are tender-crisp but still vibrant in color.
Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together, adding a little reserved pasta water to help meld the flavors, if needed.
Sprinkle the grated Parmesan cheese over the pasta and vegetables. Toss gently until the cheese is melted and the ingredients are well combined.
Taste and adjust the seasoning with more salt and pepper, if needed. Serve immediately for the best taste and texture.
