Cook the whole wheat pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining. Set aside.
In a large skillet, heat the olive oil over medium heat. Add minced garlic, and sauté until fragrant, about 1 minute.
Add the mixed vegetables to the skillet. Sauté until the vegetables are tender yet crisp, about 5-7 minutes.
Add the cooked pasta to the skillet with the vegetables. Toss to combine, adding reserved pasta water as needed to create a light sauce.
Season with salt and black pepper. Toss again to ensure everything is well coated and heated through.
Remove from heat and sprinkle freshly grated Parmesan cheese over the pasta. Toss gently to mix.
Serve warm, garnished with additional Parmesan cheese if desired.
