Breakfast Polenta

Ingredients

  • 1 cup Cooked polenta
  • 1/4 cup Grated cheese
  • 1 unit Fried egg
  • 1/2 cup Sautéed spinach

Instructions

In a medium-sized skillet, warm the cooked polenta over medium heat. Stir occasionally to prevent sticking and to heat through for about 5 minutes.

Once the polenta is heated, add the grated cheese to the skillet. Stir well until the cheese has melted and is well incorporated into the polenta. This should take about 2-3 minutes.

In another pan, if not already done, sauté the spinach over medium heat until it is wilted, which should take about 2-3 minutes. Season with a pinch of salt and pepper.

To assemble, scoop the cheesy polenta onto a plate.

Top the polenta with the sautéed spinach and place the fried egg on top of everything.

Season with additional salt and pepper to taste, and serve warm.
