Prep everything first: dice the avocado and tomatoes, mince the onion and garlic, squeeze the lime, and pick through the shredded chicken to remove any large clumps. Prepping mise en place keeps assembly fast and ensures the avocado is added at the last moment so it stays bright and doesn't brown.
Make the avocado salsa: in a medium bowl gently toss the diced avocado with the diced tomatoes, 1/4 of the minced red onion, 1 teaspoon of lime juice, 1 teaspoon olive oil, half the chopped cilantro, a pinch of salt and a few grinds of black pepper.
