Crisp-skinned salmon glazed with a glossy maple‑mustard sauce sits alongside rosemary‑roasted fingerlings and a bright charred fennel–apple slaw. The dish balances sweet, savory, herbaceous and bright acidic notes: caramelized glaze and seared skin for texture, rosemary oil–roasted potatoes for earthiness, and a crunchy, lemony slaw that cuts through the richness.
