Season the lamb chops with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper on both sides.
Heat 1 tablespoon of olive oil in a skillet over medium-high heat until shimmering.
Add the lamb chops to the skillet and cook for 3-4 minutes on each side, or until the internal temperature reaches 145°F for medium-rare.
Remove the lamb chops from the skillet and let them rest for 5 minutes.
In the same skillet, add the zucchini ribbons and sauté for 2-3 minutes until just tender. Season with a pinch of salt and pepper to taste.
Serve the lamb chops drizzled with mint pesto on top and zucchini ribbons on the side.
