Ingredients

  • 5 oz salmon fillet
  • 3/4 cup cooked quinoa
  • 1 cup mixed vegetables (broccoli, bell pepper, carrots)
  • 1 tbsp olive oil
  • 1 medium lemon
  • 2 cloves garlic
  • 1 tsp mixed herbs (e.g., thyme, rosemary)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a small bowl, mix the olive oil with minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Squeeze in the juice of half a lemon and add mixed herbs.

Place the salmon fillet on the prepared baking sheet. Drizzle half of the olive oil mixture over the salmon, ensuring it's well coated. Set aside.

Toss the mixed vegetables in the remaining olive oil mixture until well coated. Spread them evenly around the salmon fillet on the baking sheet.

Transfer the baking sheet to the preheated oven. Bake for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized.

While the salmon is baking, heat the cooked quinoa in a small pan over low heat, or use a microwave-safe dish to warm it in the microwave.

Once everything is cooked, serve the salmon on a plate with roasted vegetables and a side of warm quinoa. Slice the remaining half lemon into wedges and serve alongside for extra flavor.
