Preheat the oven to 200°C (400°F).
Peel the sweet potato and cut it into evenly sized cubes, about 1 inch each.
In a bowl, toss the sweet potato cubes with 1 tbsp olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
Roast the sweet potatoes in the preheated oven for 30-35 minutes until they are tender and golden, turning halfway through baking.
While the sweet potatoes are roasting, prepare the salmon. Season the salmon fillet with salt and pepper.
Spread a thin layer of garlic-herb butter over the top of the salmon fillet.
Place the salmon on a baking tray lined with parchment paper. Bake in the oven (next to the sweet potatoes) for 12-15 minutes, or until the salmon is opaque and flaky when tested with a fork.
During the last 10 minutes of baking, bring a pot of water to boil. Add salt and steam the broccoli florets for about 5 minutes until tender yet crisp.
Once everything is cooked, plate the baked salmon, roasted sweet potato, and steamed broccoli. Squeeze fresh lemon juice over the salmon before serving.
