Preheat your oven to 200°C (392°F).
Toss the sweet potato wedges in half of the olive oil, season with a pinch of salt and pepper, and spread them in a single layer on a baking sheet lined with parchment paper.
Roast the sweet potato wedges in the preheated oven for 20-25 minutes, turning them halfway through until they are golden and cooked through.
While the sweet potatoes are roasting, season the salmon fillet with salt and pepper. Place it on a piece of foil or a baking dish, squeeze a lemon wedge over it, and drizzle with a little olive oil if desired. Wrap the salmon in the foil or leave uncovered if using a baking dish.
After the sweet potatoes have been roasting for about 15 minutes, place the salmon in the oven to bake for the remaining 10-12 minutes, until the salmon is cooked through and flakes easily with a fork.
In the meantime, heat the remaining olive oil in a pan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the trimmed green beans to the pan with the garlic, season with a pinch of salt and pepper, and sauté for 5-7 minutes until the green beans are tender-crisp.
Once everything is cooked, plate the salmon with the roasted sweet potatoes and sautéed green beans. Serve with an extra lemon wedge if desired.
