In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
In a large skillet, heat the olive oil over medium heat. Add minced garlic and cook for 1-2 minutes, until fragrant and lightly golden. Do not let it burn.
Add the peeled and deveined shrimp to the skillet. Season with salt and pepper. Cook for 3-4 minutes, or until the shrimp are pink and opaque. Remove shrimp from the skillet and set aside.
In the same skillet, add red pepper flakes and cooked spaghetti. Toss well to coat the spaghetti with garlic oil. Add reserved pasta water little by little, if needed, to help coat the spaghetti.
Return the shrimp to the skillet and toss everything together until the shrimp are evenly distributed.
Chop the parsley finely and sprinkle over the pasta. Toss again and adjust seasoning with salt and pepper if necessary.
Serve immediately, garnished with additional parsley if desired.
