Ingredients

  • 200 g Cauliflower florets
  • 100 g Canned chickpeas, drained
  • 1 tbsp Curry powder
  • 2 tbsp Olive oil
  • 2 tbsp Cilantro, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the cauliflower florets, drained chickpeas, olive oil, curry powder, salt, and black pepper. Toss until the cauliflower and chickpeas are well coated with the curry mixture.

Spread the cauliflower and chickpeas in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and golden brown, stirring halfway through the roasting time to ensure even cooking.

Once done, remove from the oven and let it cool slightly. Transfer the roasted cauliflower and chickpeas to serving bowls.

Garnish with freshly chopped cilantro before serving. Enjoy your Curried Cauliflower and Chickpea Bowl warm.
