Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the shrimp to the skillet, season with salt and black pepper, and stir-fry until pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
In the same skillet, add another tablespoon of oil, then add the minced garlic, grated ginger, and sliced green onions. Stir-fry until fragrant, about 30 seconds.

Add the cooked rice noodles to the skillet and pour in the soy sauce. Toss everything in the skillet to combine well.
Return the shrimp to the skillet, toss everything together, and stir-fry for another 2 minutes until everything is well combined and heated through.
Adjust seasoning with salt and pepper as needed. Serve immediately, garnished with additional sliced green onions if desired.
