SeafoodAsianStir-Fry

Ingredients

  • 5 oz Shrimp
  • 1 cup (cooked) Rice noodles
  • 1 cup Mixed vegetables & light sauce
  • 2 tbsp Soy sauce
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 2 tbsp Vegetable oil

Instructions

1

Prepare the ingredients by peeling and deveining the shrimp, mincing the garlic, grating the ginger, and slicing the green onions.

2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

3

Add the shrimp to the skillet, season with salt and black pepper, and stir-fry until pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.

4

In the same skillet, add another tablespoon of oil, then add the minced garlic, grated ginger, and sliced green onions. Stir-fry until fragrant, about 30 seconds.

5

Add the mixed vegetables and light sauce to the skillet and stir-fry for another 2-3 minutes or until the vegetables are tender-crisp.

6

Add the cooked rice noodles to the skillet and pour in the soy sauce. Toss everything in the skillet to combine well.

7

Return the shrimp to the skillet, toss everything together, and stir-fry for another 2 minutes until everything is well combined and heated through.

8

Adjust seasoning with salt and pepper as needed. Serve immediately, garnished with additional sliced green onions if desired.
