Slice the chicken breast into thin strips for quick cooking.
Heat 1 tsp of oil in a large non-stick frying pan or wok over medium-high heat.
Add the sliced chicken to the pan and stir-fry for about 5 minutes, or until the chicken is mostly cooked through.
Add the mixed stir-fry vegetables to the pan. Stir-fry with the chicken for another 3-4 minutes until the vegetables are tender-crisp.
Pour in 1 tbsp of teriyaki sauce, and stir everything together until the chicken and vegetables are well coated. Continue cooking for an additional minute to heat the sauce through.
Season with a pinch of salt and pepper to taste.
Serve the chicken and vegetable stir-fry over the cooked jasmine rice.
