Preheat the oven to 375°F (190°C).
Peel and dice the potatoes into small cubes.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add chicken breast pieces and season with salt and pepper. Cook until browned on all sides and cooked through, about 6-8 minutes. Remove from heat and set aside.
In the same skillet, add the remaining olive oil and butter. Add the chopped onion and minced garlic, sauté until translucent.
Add the diced potatoes to the skillet, and cook for 5 minutes, stirring occasionally.
Add rice and pasta to the skillet, and cook for another 2-3 minutes, mixing well.
Pour in the chicken broth and heavy cream. Stir in thyme, salt, and pepper. Bring to a simmer.
Gently fold in the cooked chicken pieces. Transfer everything to a baking dish.
Sprinkle cheddar cheese evenly over the top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and golden.
Remove from oven and let rest for 5 minutes before serving.
