Rice with Tomato Basil Sauce

Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 cup tomato sauce
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 medium onion
  • 1/4 cup basil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Rinse the rice under cold water to remove excess starch.

In a medium saucepan, bring 2 cups of water to a boil. Add a pinch of salt.

Add the rinsed rice to the boiling water. Reduce the heat to low, cover, and let it simmer for 18-20 minutes, until the rice is cooked and the water is absorbed.

While the rice is cooking, dice the onion and mince the garlic cloves.

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Add the minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.

Pour in 1 cup of tomato sauce and stir to combine with the onions and garlic. Let it simmer for 5 minutes.

Add the chopped basil, salt, and black pepper to the sauce, stirring well. Let it simmer for an additional 3 minutes.

Once the rice is cooked, serve it on a plate and pour the tomato basil sauce over it.
