Start by cracking the 4 large eggs into a bowl. Season with a pinch of salt and pepper. Whisk until the yolks and whites are fully combined.
Peel and finely chop the small onion.
In a medium-sized skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until the onion is soft and translucent.
Add 1 cup of fresh spinach to the skillet with the onion. Cook for another 2-3 minutes, stirring occasionally until the spinach is wilted and bright green.
Pour the beaten eggs evenly over the spinach and onion mixture. Allow the eggs to cook undisturbed for about 2-3 minutes until the edges start to set.
Sprinkle 1/4 cup of crumbled feta cheese evenly on top of the eggs while the omelet is still slightly runny on top.
Using a spatula, gently fold one side of the omelet over the other. Let it cook for an additional minute to ensure the inside is fully cooked while the cheese melts.
Carefully slide the omelet onto a plate and season with additional salt and pepper if desired. Serve immediately while hot.
