Ingredients

  • 180 g salmon fillet
  • 200 g sweet potato
  • 150 g broccoli
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 piece lemon

Instructions

Preheat your oven to 200°C (392°F).

Peel the sweet potato and cut it into 1-inch cubes.

Toss the sweet potato cubes with half of the olive oil, a pinch of salt, and a dash of black pepper.

Spread the sweet potato cubes on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.

While the sweet potatoes are roasting, season the salmon fillet with the remaining olive oil, a pinch of salt, and pepper. Place on a baking dish lined with parchment paper.

Add the salmon to the oven during the last 15 minutes of roasting the sweet potatoes. Bake until the salmon is cooked through and flakes easily with a fork.

Cut the broccoli into florets and bring a pot of water to a boil. Place the broccoli in a steaming basket and steam over boiling water for about 5-7 minutes, or until tender-crisp.

Once everything is cooked, plate the salmon fillet, roasted sweet potatoes, and steamed broccoli.

Serve with a squeeze of fresh lemon juice over the salmon and veggies for added flavor.
