Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it with olive oil.
Place the salmon fillet on the prepared baking sheet. Drizzle with 1/2 tablespoon of olive oil, and season with salt, black pepper, and half of the mixed herbs.
In a bowl, toss the mixed vegetables with the remaining 1/2 tablespoon of olive oil, minced garlic, remaining mixed herbs, and a pinch of salt and black pepper.
Arrange the seasoned vegetables around the salmon on the baking sheet.
Cut the lemon into wedges and squeeze half over the salmon and vegetables. Reserve the rest for serving.
Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
While the salmon and vegetables are baking, heat the cooked quinoa if necessary.
Serve the baked salmon with the roasted vegetables on a plate, accompanied by the quinoa. Garnish with fresh lemon wedges on the side.
