Rinse the rice under cold water until the water runs clear. This removes excess starch and ensures the rice isn't sticky.
In a medium saucepan, combine the 1 cup of rice with 2 cups of water. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for 15-18 minutes, or until the rice is cooked and water is absorbed.
While the rice is cooking, prepare the guacamole. Cut the avocados in half, remove the pits, and scoop the flesh into a medium bowl.
Dice the red onion finely and add it to the bowl with the avocado.
Chop the fresh cilantro and add it to the bowl.
Roll the lime on the counter to release juices, cut it in half, and squeeze its juice over the avocado mixture.
Add 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 tablespoon of olive oil to the mixture. Mash together with a fork until you reach your desired consistency.
Taste the guacamole and adjust the seasonings if needed.
Fluff the rice with a fork, then serve warm with a generous scoop of guacamole on top or on the side.
