Start by preparing the vegetables and chicken. Slice the chicken breast into thin strips. Slice the bell peppers and half an onion thinly. Chop the cilantro and set aside for garnishing.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced onions and bell peppers with a pinch of salt and pepper. Sauté until they begin to soften, about 4-5 minutes.
Add the sliced chicken to the skillet with the vegetables. Season with 1 teaspoon of chili powder, salt, and pepper to taste. Cook until the chicken is browned and cooked through, about 5-7 minutes.
While the chicken is cooking, prepare the guacamole. In a small bowl, mash the 1/2 avocado with 1 tablespoon of lime juice. Add salt to taste and mix until smooth.
In a separate pan, add the cauliflower rice over medium heat. Cook for about 5-7 minutes until tender, adding salt and pepper to taste.
Once everything is cooked, assemble the bowl. Start with a layer of cauliflower rice, then add the chicken and vegetable mixture on top. Add a scoop of guacamole.
