In a mixing bowl, combine the sliced chicken breast with 1 tsp of chili powder, and salt and pepper to taste. Mix well to coat the chicken evenly with the spices.
Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the seasoned chicken slices and cook for about 5-7 minutes, stirring occasionally, until the chicken is thoroughly cooked and no longer pink.
Add the sliced bell peppers and onion to the skillet with the chicken. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
In a separate clean pan, lightly spray with cooking oil and heat over medium heat. Add the cauliflower rice and sauté for 5-7 minutes until it is tender. Season with salt and pepper to taste.
In a small bowl, mash the half avocado with 1 tbsp of lime juice, and season with a pinch of salt. Mix until smooth to create the guacamole.
Assemble the fajita bowl by placing cauliflower rice at the base, then topping it with cooked chicken and vegetables. Add a dollop of guacamole on the side.
Garnish the bowl with fresh cilantro leaves before serving.
