Ingredients

  • 12 oz Salmon fillet
  • 2 medium Sweet potatoes
  • 12 oz Green beans
  • 2 tbsp Olive oil
  • 1 tsp Garlic

Instructions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with oil.

Peel and cube the sweet potatoes into 1-inch pieces. Place them in a bowl and toss with 1 tablespoon of olive oil, salt, and pepper.

Arrange the sweet potato cubes in a single layer on the prepared baking sheet and bake for 25-30 minutes, flipping halfway through, until they are tender and golden brown.

While the sweet potatoes are baking, season the salmon fillets with salt and pepper. Set aside.

In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté for 30 seconds until fragrant.

Add the green beans to the skillet, season with salt and pepper, and sauté for 8-10 minutes, stirring occasionally, until they are tender-crisp.

Once the sweet potatoes have been baking for 15 minutes, place the seasoned salmon fillets on the same baking sheet. Bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve the baked salmon with roasted sweet potatoes and sautéed green beans. Garnish with lemon wedges, and enjoy!
