  • 2 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tbsp vegetable oil
  • 2 tbsp butter
  • 2 tsp baking powder
  • 1/4 tsp salt

Instructions

In a large bowl, whisk together the eggs and milk until well combined.

Add the all-purpose flour, sugar, baking powder, and salt to the wet mixture. Stir until just combined; the batter should be slightly lumpy.

Heat a non-stick skillet or griddle over medium heat and lightly grease it with a little vegetable oil or butter.

Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.

Repeat the process with the remaining batter, greasing the skillet as needed.

Serve warm with butter and your choice of syrup or toppings.
