Greek Yogurt Parfait with Granola & Berries

By Brittanie Peterson

Total: 10 minutes
BreakfastDessertHealthyQuick & Easy

Ingredients

  • 2 cups plain Greek yogurt (2% fat)
  • 3/4 cup mixed berries (strawberries, blueberries)
  • 1/2 cup granola
  • 1 tbsp honey
  • 1 tbsp chia seeds

Instructions

1

Rinse the mixed berries under cold water and gently pat dry with paper towels. Set aside.

2

In a medium-sized bowl, combine the Greek yogurt and chia seeds. Stir until the chia seeds are evenly distributed throughout the yogurt. Allow the mixture to sit for 3-5 minutes to let the chia seeds start absorbing some moisture and soften slightly.

3

Spoon a layer of the Greek yogurt mixture into the bottom of each serving cup or bowl (about 1/4 cup each).

4

Add a layer of granola on top of the yogurt (about 2 tbsp per serving).

5

Top the granola with a layer of mixed berries (about 2 tbsp per serving).

6

Drizzle half a tablespoon of honey over the berries in each serving dish.

7

Repeat the layers: another layer of Greek yogurt, followed by granola, and then the remaining berries.

8

Finish with a final drizzle of honey equally divided among the serving dishes. Serve immediately to enjoy the crunchy texture of granola.
