Ingredients

  • 3 cups Greek yogurt
  • 2 cups Mixed berries (strawberries, blueberries, raspberries)
  • 1.5 cups Granola
  • 3 tbsp Honey
  • 3 tbsp Chia seeds
  • 1 tsp Lemon zest (optional)

Instructions

In a medium-sized bowl, combine the Greek yogurt with the honey and mix until smooth and evenly incorporated.

Wash and gently pat dry the mixed berries. If necessary, hull and slice the strawberries.

To assemble the parfaits, spoon 1/4 cup of the yogurt mixture into the bottom of each serving glass or bowl.

Add a layer of mixed berries on top of the yogurt, followed by a sprinkle of chia seeds.

Add a layer of granola over the berries.

Repeat the layers (yogurt, berries, chia seeds, granola) until the glasses are full, ending with a layer of berries and a sprinkle of chia seeds.

Optional: Garnish each parfait with a pinch of lemon zest for added flavor.

Serve immediately or refrigerate for up to 2 hours before serving. This will allow the chia seeds to absorb some moisture and become slightly gel-like, enhancing the texture.
