  • 1 whole Medium cauliflower
  • 100 g Bell peppers
  • 200 g Grilled chicken breast
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1/4 cup Cilantro
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Lime juice

Instructions

Start by preparing the cauliflower. Cut it into florets and then grate it to resemble rice. You should get about 4 cups of 'cauliflower rice' from one medium cauliflower.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic cloves and sauté for about 30 seconds, or until fragrant.

Add the diced bell peppers to the skillet and cook for 2-3 minutes, until they start to soften.

Add the grated cauliflower to the skillet, season with salt and black pepper, and stir well. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.

In a separate pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the sliced grilled chicken and cook until heated through, about 3-4 minutes.

Mix the heated chicken into the cauliflower rice, ensuring everything is well combined.

Remove from heat and stir in lime juice and chopped cilantro.
