Thinly slice the shiitake mushrooms. Julienne the ginger into thin strips. Slice the scallions and set aside.
In a large pot, combine the jasmine rice and 8 cups of vegetable broth or water. Bring to a boil over high heat.
Once boiling, reduce the heat to low and add the sliced shiitake mushrooms and julienned ginger to the pot.
Cover the pot partially with a lid and let it simmer for about 45 minutes, stirring occasionally, until the rice has broken down and the mixture has reached a thick, porridge-like consistency.
While the congee is cooking, prepare the quick pickles. Slice the radish thinly and place in a small bowl. Add rice vinegar and sugar. Stir well to combine and let marinate for at least 20 minutes.
Once the congee has reached the desired consistency, stir in the sesame oil and season with soy sauce or tamari to taste.
Serve the congee hot, topped with sliced scallions and the quick-pickled radish.
