In a mixing bowl, mash the banana using a fork until smooth. Set aside.
In a separate bowl, combine 1 cup of flour, 1 tablespoon of baking powder, and a pinch of salt (about 1/4 teaspoon). Mix well to combine.
Add the mashed banana to the dry ingredients, then pour in 1 cup of almond milk. Mix gently until just combined. Do not over mix; a few lumps are okay.
Preheat a non-stick skillet or griddle over medium heat. If needed, lightly grease it with cooking spray or a bit of oil.
Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.
Remove the pancakes from the skillet and keep them warm in a low oven (around 200°F or 93°C) while repeating with the remaining batter.
Serve the pancakes warm, drizzled with maple syrup to taste. Enjoy your fluffy banana pancakes!
