In a medium-sized mixing bowl, combine the chia seeds and unsweetened almond milk. Stir well to ensure that all seeds are fully immersed in the milk.
Add the maple syrup to the chia seed mixture and stir until well combined.
Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow it to chill and set for at least 4 hours, or overnight for best results. The chia seeds will swell and create a pudding-like consistency.
Once the chia pudding is set, give it a good stir to break up any clumps.
Spoon the chia pudding into a serving bowl or glass. Top with mixed berries.
Serve immediately, or store in a covered container in the refrigerator for up to 5 days.
