Two restaurant-quality chicken dinners you can make in one afternoon: bright, caramelized lemon-herb roasted thighs with a silky garlic pan sauce, roasted baby potatoes and crisp green beans; and a quick, sticky honey-soy chicken stir-fry served over steamed jasmine rice. Contrasting textures — crisp exterior and juicy meat on the roast, and a glossy, saucy stir-fry — plus balanced savory, sweet and acidic notes make these dinners feel special and memorable.
Mise en place for both dinners: pat all chicken dry with paper towels (dry surface browns better), mince garlic and grate ginger, zest and juice the lemon, halve baby potatoes, trim green beans, slice red pepper, and cook rice if not already done. Doing prep first keeps timing tight and prevents overcooking.
Marinate and season proteins: For Dinner A, place 500 g chicken thighs in a bowl with 1 tbsp olive oil, 1 tsp lemon zest, 1 tbsp chopped rosemary, 1 tbsp chopped thyme, 3 minced garlic cloves, 1 tsp kosher salt, and 3/4 tsp black pepper.
